Creamy Vegan Cauliflower Mashed 'Potatoes'
 
 

This is one of my all-time favorite recipes!

 

It’s super easy to make and tricks people into thinking that they’re eating “real” potatoes every time.

 
 

CREAMY VEGAN CAULIFLOWER MASHED “POTATOES”
1 head Cauliflower
1/4 c. Almond Milk (unsweetened, plain)
1/2 tsp. granulated garlic powder
2 Tbs. Trader Joe’s Vegan Cream Cheese or 4 Tbs. Nutritional Yeast or 2 Laughing Cow Wedges
Salt and Pepper to taste
Cut the cauliflower into 1 inch chunks. Boil or steam cauliflower until soft. Place the cauliflower along with the rest of the ingredients into a high powered blender or food processor. Blend until smooth.
NOTE: you can adjust the amount of almond milk according to how thick or thin you like your mashed “potatoes”.
SERVES 6-10
